Vidalia Onion Relish

Ingredients
  • 2 cups chopped onions
  • 2 cups chopped cabbage
  • 2 cups chopped green peppers
  • 2 cups chopped red peppers
  • 1/2 cup salt
  • 2 cups sugar
  • 2 cups vinegar
  • 1 tbsp celery seed
  • 1 tbsp mustard seed
Instructions

Wash and chop vegetables. Dissolve salt in water and pour over veggies. Let stand overnight (12 hours). Drain ans rinse. Cover with fresh water and let stand 1 hour. Dissolve sugar in vinegar, add spices and bring to a boil. Add drained veggies and simmer 15 minutes. Bring to a full boil. Pack into sterilized jars and process in water bath 15 minutes. Makes 3 pints.
