Ingredients
  • 1 quart chopped cukes
  • 2 cups chopped onion
  • 1 cup chopped sweet green pepper
  • 1 cup chopped sweet red pepper
  • 1/4 cup salt
  • 3 1/2 cups sugar
  • 2 cups cider vinegar
  • 1 tablespoon celery seed
  • 1 tablespoon mustard seed
Instructions

Combine cukes, onions, green and red peppers in a large bowl, sprinkle with salt and cover with cold water. Let stand 2 hours. Drain thoroughly, press out excess liquid. Combine sugar, vinegar and spices in a large sauce pot. Bring to a boil. Add drained vegetables and simmer 10 mins. Pack hot into hot jars, leaving 1/4 inch head space. Adjust caps. Process for your altitude in boiling water bath About 8 half pints
