Strawberry rhubarb Jam

Ingredients
  • 1 3/4 plus 1 tbsp c hulled, crushed stawberries
  • 1/8 c lemon juice
  • 1 1/2 c prepared rhubarb
  • 6 1/2 c sugar
  • 1 pouch liquid Certo
Instructions

To prepare rhubarb - slice thin or chop 1 lb rhubarb, add 3/8 c water and simmer, covered until soft, about 5 minutes; measure fruit for recipe Follow the instructions in the Certo for making the actual jam - basically: Wash jars and lids. Prepare fruit. Measure prepared fruit. Add sugar to fruit and mix well. Place over high heat - stirring constantly bring to full rolling boil, boil hard 1 minute, remove from heat. Stir in Certo liquid. Stir and skim for 5 minutes. Pour into warm, sterilized jars After jars are cool, test for seal.
