Strawberry Preserves

Ingredients
  • 2 cups crushed ripe strawberries
  • 4 cups sugar
  • 3/4 cup water
  • 1 box pectin
Instructions

In a bowl, add sugar to fruit and let stand 10 minutes, until sugar is mostly dissolved. Mix water and pectin in a small saucepan and bring to a boil. Boil for one minute, stirring constantly. Remove from heat and stir the pectin into the fruit; stir for 3 minutes. Ladle into sterilized jars, leaving 1/2" headroom. Seal with sterilized lids. Let stand at room temp until jam is set (about one day), then freeze. This makes 5 or 6 8-oz jars.
