Sweet Onion Mustard

Ingredients
  • 4 tbsp. dry mustard
  • 3 teaspoons sweet pickle juice
  • 1 teaspoon salt
  • 3 tbsp. sweet relish
  • 1 c. vinegar
  • 1 tbsp. sugar
  • 3 egg yolks, beaten
  • 1/2 c. finely diced onions
Instructions

Beat mustard, vinegar, pickle juice, sugar and salt. Cover and let stand 2-3 hours. Place mixture on top of double boiler over simmering water. Whisk in egg yolks and continue whisking for 5 minutes until mustard and creamy. Stir in relish and onion. Yields about 1 1/2 cups. Great on hamburgers.
