Sweet Cucumber Pickles

Ingredients
  • 3 1/2 pounds cucumbers
  • 1 cup lime
  • 1 gallon water
  • 3 1/4 pounds sugar
  • 1 quart vinegar
  • 2 tablespoons pickling spice
  • 1 tablespoon celery seeds
Instructions

Wash, cut and weigh cucumbers. Slice 1/4" thick. Soak in lime water for 24 hours Wash and soak in clear water. Change water every hour for 4 hours. Drain well. Cook vinegar, sugar & spices and pour over uncooked cucumbers Let stand overnight, covered with dishtowel. Cook uncovered 45 minutes or until clear. Pack in jars and process in water bath for 5 minutes for pints or 10 minutes for quarts. Makes about 7 pints. NOTES : Put pickling spice in cheesecloth bag household or pickling lime.
