Plum Bbq Sauce

Ingredients
  • 5 lbs. plums, washed, pitted, quartered
  • 3 c. apple juice
  • 1 c. red wine vinegar
  • 2 c. chopped onions
  • 3 cloves garlic, minced
  • 1/4 c. lemon juice
  • 2 (8 oz.) cans tomato sauce
  • 1 1/2 c. dark molasses
  • 1 1/4 c. firmly packed brown sugar
  • 2 Tbsp. Worcestershire sauce
  • 2 Tbsp. prepared mustard
  • 1/4 c. cider vinegar
  • 2 teaspoons salt
  • 1/2 teaspoon celery seed
  • 1 teaspoon black pepper
  • 1 teaspoon crushed red pepper
  • 1 teaspoon ground ginger
Instructions

In large pot, combine plums, juice, red wine vinegar, onions, garlic and lemon juice. Cook over medium-high heat until plums soften and mixture boils. Puree mixture in food processor and return to pot. Add remaining ingredients and bring to a full boil. Simmer 1 - 1 1/2 hours on med-low until thickened, stirring frequently. Process 20 minutes in boiling water bath. I was able to make 5 1/2 pints with this recipe.
