Pickled Onions

Ingredients
  • 12 pounds pickling onions
  • salt
  • 4 pounds sugar
  • 1 tsp alum
  • 1 tablespoon cloves
  • 1 tablespoon allspice
  • 4 or 5 chillies
  • 3 26-oz bottles white vinegar
Instructions

Peel onions, put in dish and cover with cold water, add a good handful of salt, change every day for 3 days, then dry onions. Put in jars. Disolve sugar and alum in vinegar, add spice etc., and pour over onions, stir next day with wooden spoon and leave. Keeps for years - if you can resist the temptation.
