Peach Chutney

Ingredients
  • 1 kilogram peaches
  • 2 crushed cloves garlic
  • 4 tablespoons preserved ginger cut up
  • 2 tablespoons dried figs
  • 500grams raisins
  • 500grams dates chopped
  • 1 kilgram brown sugar
  • 1 teaspoon cayenne pepper
  • 1 tablespoon salt
  • 3 and 1/2 cups malt vinegar
Instructions

Chop up the peaches, add vinegar and garlic. Boil unitl the peaches are soft. Add the other ingredients and boil another half hour and required thickness is reached. Place in hot sterilised jars and seal.
