Boil the peel strips in a few changes of water. Start with cold water and peels, bring to a boil, pour off the water and do it again. Three or four times if you need to, until the bitterness is gone and the peels are pretty tender. Make up a plain sugar syrup. Start with sugar in a pot and add enough water to make a medium-thick syrup. Watch the heat - you don't want to syrup to caramelize. Add peel and simmer until the peels are transparent. Lift the peels out with a slotted spoon, roll in granulated sugar and arrange on waxed paper to cool and set. Optional: add a pinch or two of aromatic spices to the syrup. cinnamon, nutmeg, etc. This works with orange peel, lemon peel, etc.
