Mint Jelly

Ingredients
  • Gelatine or aspic leaves or powder
  • 5 fl ounces cider vinegar
  • 1 ounce castor sugar
  • 3 ounces chopped mint or to taste
Instructions

Make up gelatine/apic according to instructions but instead of all the water, add the cider vinegar. When dissolved, add sugar and stir until dissolved. Make sure the jar are warmed. Add chopped mint to the jel and stir until evenly dispersed. Pour into the warmed jar and allow to cool until just slightly warm. Place greaseproof disk on top and seal. Once opened, keep remainder in refridgerator.
