Marmalade

Ingredients
  • 6 Sevilla oranges
  • 2 l water
  • 1 3/4 kg sugar
Instructions

Cut oranges in two, squeeze out pulp and juice and separate seeds. Cut the rind finely. Pack the seeds in a gaz and put back. Let stand for 24 hours, all mixed without sugar. Give it a boil and simmer for about 2 hour until the rinds are tender. Then add sugar, stir until dissolved and simmer until the jam sets when testing. If you continues to boil, it can also give a dark marmalade which is extremely good, but also very bitter and rich in taste, so many find it too strong.
