Kiwifruit Jam

Ingredients
  • 1 kg kiwifruit
  • grated zest of 1 lemon
  • juice of 3 lemons
  • 3 c sugar
  • 1 c water
Instructions

Peel the kiwifruit and chop roughly. Place into a saucepan with the juice and zest and water. Boil until the fruit is soft and pulp-like. Stir in the sugar until dissolved and boil without stirring until setting point. Bottle. 2 tablespoons of crystallised ginger may be added when the sugar is added.
