Hot Pepper Jelly

Ingredients
  • 1 1/2 cups chopped red bell peppers
  • 1 1/2 cups chopped green bell peppers
  • 1 cup chopped jalapeno peppers
  • 1/2 cup cider vinegar
  • 1/2 cup water
  • 3 cups sugar
  • 1 pkg lo-sugar Sure-Jell
Instructions

Mix 1/4 C sugar (from the pre-measured 3 C) with pectin in small bowl. Add to rest of stuff. Add 1/2 tsp margarine or butter (to prevent foaming). Bring mixture to full rolling boil, stirring constantly. Quickly stir in remaining sugar, return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam. Fill jars and seal. (BWB for 5 or 10 minutes).
