Green Tomato Mincemeat

Ingredients
  • 16 cups green tomatoes, chopped fine
  • 8 cups apples, diced
  • 2 pounds raisins
  • 1 pound currants
  • 2 1/2 pounds brown sugar
  • 1 pound candied mixed fruit
  • 1 cup vinegar
  • 1/2 pound suet or margarine
  • 2 cups brandy or apple juice
  • 2 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • 2 teaspoons ground cloves
  • 2 teaspoons rum flavoring
Instructions

Drain chopped tomatoes. Add 1 1/2 quarts water and boil for 1 hour. Remove from heat and leave overnight. Drain and add all ingredients except brandy and flavorings. Boil for 2 hours. Then add brandy/juice and flavorings. Seal in sterilized jars and process in boiling water bath. NOTES : Makes 4-5 quarts.
