Green Tomato Marmalade

Ingredients
  • 3 quarts sliced green tomatoes
  • 6 cups sugar
  • 1 teaspoon salt
  • 6 lemons
Instructions

Mix tomatoes, sugar, and salt in bowl. Peel lemons and slice peel very thin. Boil peel in 1 cup water for 8 minuites; drain, and discard water. Slice lemon pulp thin and remove seeds. Combine lemon rind, pulp and tomato mixture in large kettle. Heat to boiling and cook rapidly, stirring constantly, for about 45 minutes, or until thickened. Pour into hot sterilized jars and seal. Makes about six 1/2 pint jars.
