Green Olives

Ingredients
  • 1 kg green olives
  • salt
  • water
  • fennel
Instructions

Hit the olives lightly with a hammer. Soak covered in water, changing water every day for a week (this removes the bitterness). The eighth day, cover the olives in 10% salt solution (100g salt for each liter of water). Add wild fennel and keep in the refrigerator.
