Garlic Marinated Mushrooms

Ingredients
  • 1/2 c. white or red wine vinegar
  • 1/4 c. olive oil
  • 4 cloves garlic, crushed
  • 3/4 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 1 lb. fresh button mushrooms
  • 1 tbsp. chopped mixed fresh herbs (basil, oregano, tarragon) or 1 tsp dried
  • 1 red pepper, cut into thin slices
  • 1 sm. head Romaine lettuce (or substitute your favorite)
  • Sprig of fresh basil for garnish
Instructions

Place mushrooms, herbs and red pepper strips in a non-aluminum bowl. Combine all other ingredients (except lettuce and garnish) in saucepan. Add 3/4 cup water. Bring to a boil. Reduce heat and simmer 10 minutes. Pour marinade over mushroom mixture. Cover and chill at least 2 hours or overnight. When ready to use, drain mushroom mixture. Place atop lettuce. Garnish with basil sprig.
