Freezer Strawberry Jam Sweetened with Stevia

With only four ingredients and three easy steps, this freezer strawberry jam recipe, sweetened with stevia is one of our easiest freezer jam recipes. Simply mix all ingredients in a sauce pan, boil for one minute then freeze and you have easy freeze jam.

Ingredients

  • 1 package, no-sugar pectin
  • 2 teaspoons stevia
  • 1 cup cold water
  • 5 cups sliced strawberries

Instructions

  1. Put pectin, stevia, water in saucepan and stir while bringing to boil over medium/high heat.
     
  2. Boil for one minute then add strawberries.
     
  3. Stir well; pour into plastic containers and freeze.

Why plastic containers instead of glass?

Are you using the small packets of powdered stevia, where a tiny amount sweetens, or the bag on stevia, which measures more like sugar, by the cup? Thanks.

This recipe looks interesting. I have used stevia in the past that can cause a chemical taste if you use to much. What type of stevia are you using here? Is it powdered stevia extract or liquid stevia, or something else. I don't want to use to much.

Why can't you process this in a water bath and not freeze?

Stevia is a plant that is processed and used for sweetener. Being that it is a plant and is dehydrated at the end of the growing season there are no chemicals involved. You can grow it yourself and dry it yourself also. In most freezer jam recipes the sugar involved us usually 1-11/2 Cups per recipe. You can get by with1 cup. Mary P.
