Freezer Pickles

Ingredients
  • 2 quarts thinly sliced cucumbers
  • 1 med onion, thinly sliced
  • 2 tablespoons canning salt
  • 1 1/2 cups sugar
  • 1 cup vinegar
Instructions

In a large pan soak onions and cucumbers with the the salt for 2 hours (add no water, makes onions juicy). Drain off juice. Mix and add 1 1/2 cups sugar and the 1 cup vinegar and mix well pour over cucumber and onions and place in to plastic containers and freeze. If you feel you do not have enough brine, make another batch. Thaw when ready to eat.
