Crisp Pickle Slices

Ingredients
  • 8 cups sliced pickling cucumbers
  • 3 cups sliced onions
  • 3/4 cup sliced sweet green peppers
  • 2 cloves garlic
  • 3 tablespoons kosher salt
  • cracked ice
  • 2 1/2 cups sugar
  • 1 1/2 cups cider vinegar
  • 1 tablespoon mustard seed
  • 3/4 teaspoon celery seed
  • 3/4 teaspoon turmeric
Instructions

About 4 pints Crisp Pickle slices. In large glass or stainless steel bowl, combine cucumbers, onion, green pepper, garlic, and salt, mix well; cover with cracked ice. Let stand 3 hours; remove garlic and drain well. In sauce pan combine sugar, vinegar, mustard seed, celery seed, and turmeric; add drained cucumber / onion / green pepper mixture and bring to a boil. Pack mixture and liquid into hot sterile pint jars, leaving 1/2 inch head space. Adjust lids. Process in boiling water bath for 7 minutes.
