Cranberry Chutney

Ingredients
  • 1 cup onion
  • 1 cup water
  • 1/2 cup sugar
  • 3/4 cup brown sugar
  • 2 apples, peeled and cubed
  • 1/2 cup cider vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon ginger
  • 1 teaspoon mace
  • some fresh ginger, grated
  • 2 orange rinds, chopped
  • 1 quart cranberries
  • 1/2 cup raisins
Instructions

Combine onion, water, and sugars and simmer for 30 minutes. Add the apples, vinegar, salt, ginger, mace, grated ginger, and orange rind and cook for 1/2 hour. Add the cranberries, the juice of two oranges, and 1/2 cup raisins and boil hard for 10 minutes
