Ingredients
  • 5 pounds green tomatoes
  • 1 1/4 pounds demerara sugar
  • 1 quart malt vinegar
  • 1/2 pound sliced onions
  • 1/2 pound sliced apples
  • 1/2 teaspoon cayenne pepper
  • 4 chiles chopped small
  • 1/2 teaspoon ground black pepper
Instructions

Slice the tomatoes on a large dish, sprinkle sparingly with salt, and leave for 24 hrs. Next day, drain and put in preserving pan. Add all the other ingredients. Bring to the boil then simmer gently for 2 hours. Bottle while still hot. Tie down after 4 hours. Improves with keeping!
