Blueberry Chutney

Ingredients
  • 1 1/2 pts. (about 3 c.) fresh blueberries, sorted, washed or frozen
  • blueberries without sugar
  • 1/4 cup chopped, mild onion
  • 1 Tbsp. grated fresh gingerroot
  • 1/2 cup firmly packed light brown sugar
  • 1/3 cup cider vinegar
  • 1 Tbsp. cornstarch
  • 1/4 teaspoon salt
  • 1 (3 inch) cinnamon stick
Instructions

In large saucepan, combine all ingredients. Bring mixture to boil over medium heat, stirring frequently. Boil 1 minute. Remove cinnamon stick, Cool. Cover, refrigerate. Serve as a condiment with meats and cheeses (2 cups). MICROWAVE DIRECTIONS: Combine all ingredients in 8-cup microwave-safe measuring cup. Microwave on HIGH for 12 to 15 minutes or until mixture boils and is slightly thickened, stirring twice during cooking. Remove cinnamon stick. Cool. Cover, refrigerate. Serve as a condiment with meats and cheese.
