Ingredients
  • 5 pounds meat either all fatty pork butt or 3lb pork and 2lb beef
  • 1 large onion
  • 3 cloves garlic
  • 1 tsp red pepper
  • 2 T salt
  • 1 T black pepper
  • 1/2 cup water
  • sausage casings
Instructions

Grind the spices together with the water. Cut the meat into small cubes. Mix spices over meat and allow to set in refrigerator. Stuff into casings using coarsest blade of sausage attachment to the Oster Center or what ever brand of mixer you have. Note: Casings can be found at various local meat shops that advertise making their own sausage. They will usually sell if you are a regular customer. You can also mince the meat and stuff casings by hand to get a more authentic sausage.
