Red Potato Salad

Ingredients
  • 2 pounds red potatoes, boiled in their jackets, then cut in cubes
  • 1 red onion, sliced
  • 1 or 2 stalks celery, sliced crosswise
  • 1 dill pickle, sliced
  • 1/2 cup Best Foods (Hellman's) low fat mayonnaise
  • 1 tablespoon mustard
  • dill pickle juice, lemon juice or red wine vinegar
  • chopped fresh Italian parsley
  • sugar to taste
Instructions

4 servings. Mix all the ingredients together and let sit for 1/2 hour before serving to allow the flavors to blend.
