Caldo Verde

Ingredients
  • 1 pound fresh kale, stems removed, chopped
  • 4 potatoes, peeled and thinly sliced
  • 1 medium onion coarsely chopped
  • 1 ts salt
  • 1 tb bacondrippings
  • 1 tb olive oil
Instructions

Take kale and remove the stems and discard, set aside in a pot of cold water. Boil the potatoes, onion, and bacon drippings in 2 1/2 quarts water. When potatoes are soft mashthem in the pot leaving them a bit coarse. Drain the kale and blanch with boiling water. (I put the kale in a colander and pour boiling water over the kale.) Add the kale to the potato mix, add salt if needed, 1 tb olive oil and simmer for 15 minutes uncovered. If too thick add some water. I like to leave my potatos with some body an try not to puree them.
