Perfect Pizza Dough

Ingredients
  • 1 1/2 tsps yeast
  • 1 tsp sugar
  • 1/4 cup warm water
  • 8 ounces (1 cup) flour (for one 12" pizza or 16 oz. (2 cups) for two)
  • 1 1/2 tbs oil
  • 1/2 tsp salt
Instructions

(For a softer dough add 1 tbs. of dry milk powder) Mix yeast and sugar into the warm water and stir. Keep for 5 minutes till the froth develops. Add flour, oil, salt and the yeast mixture into a bowl and make up dough by kneading well. Add water slowly while kneading till the dough is formed. It should be holding together and not moist. If too much water has been added, then add a little bit of flour and knead again. Keep in a warm place covered with a moist cloth. It should double in size in about 45 minutes. Knock back and knead again for a few minutes. Keep for another 30 minutes till it rises again. Roll out the dough to the required thickness and place on a greased pizza tray. Make the edges of the pizza slightly thicker. Put tomato sauce on to the pizza and spread around evenly. Add toppings. Cooked sausage, chicken, mince meat, mushrooms, cooked aubergines, raw onion rings, sliced garlic etc. Sprinkle with grated mozzarella cheese or Parmesan cheese. Pour a thin stream of oil over the pizza and bake in a hot oven for about 15 minutes till the crust browns. Add 2 tbs. Of cumin seeds to the dough while kneading. Also sprinkle top of pizza with oregano, mixed herbs or cumin seeds before baking. This gives an interesting flavor
