Sweet Potato Custard Pie

Ingredients

  • 1 unbaked 9-inch pie shell
  • 2 eggs, slightly beaten
  • 1/4 c. sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1 teaspoon grated orange peel
  • 1 3/4 c. milk
  • 2 1/2 c.peeled and grated raw sweet potato, slightly packed
  • 1 Tbls. melted butter

Instructions

Combine eggs, sugar, salt, nutmeg, cinnoman, orange peel and milk. Add sweet potatoes, grated right before adding to milk mixture. Stir in butter. Pour into pie shell; bake at 400 degrees F for 45-50 minutes, or until knife inserted 1 inch from edge comes out clean. Serve slightly warm or cold.
