No-Bake Coconut Cream Pie

Ingredients

  • 1/2 cup sugar
  • 5 tablespoons all-purpose flour
  • 1/8 teaspoon salt
  • 1/4 cup cold milk
  • 1 1/2 cup scalded milk
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup coconut, shredded
  • 1 (9-inch) pie crust
  • MERINGUE:
  • 3 egg whites
  • 2 tablespoons sugar

Instructions

  1. Blend together the sugar, flour and salt with the cold milk. Add scalded milk, gradually, stirring constantly.
     
  2. Cook mixture in a saucepan over a low heat until thick.
     
  3. Add beaten egg yolks. Cook 2 minutes longer. Remove from heat. Add vanilla extract and coconut. Cool completely, then pour into previously baked pie shell. Cover with meringue, and then place in the refrigerator until the pie is completely cooled and is set.
     
  4. To make the meringue: Beat egg whites until stiff. They should be glossy on top and when you invert the bowl, they should remain in place. Fold in the sugar, gradually. Cover the pie with meringue.

I made this pie exactly as stated, except for the meringue. I still baked it, and let it get slightly brown on top. The pie was delicious! This had the same taste of my mother's coconut creme pie. And for anyone who is worried about baking the pie with the meringue, it came out beautifully. I just chilled the pie the night before Thanksgiving. I will be making this again!

I have to agree with other comments -- I've made lots of meringues but would never dream of serving it raw -- so I find it hard to trust this recipe.

well its no bake but its surely not instant I mean geesh it really is bake I think sucks

I can't imagine anyone preparing a pie and making meringue from raw egg whites and not baking the meringue. That is inviting disaster by eating raw eggs.

Meringue powder may be used instead. Just follow directions on can.
