Mock Pecan Pie

Ingredients

  • 1 cup mashed pinto beans
  • 2 cups sugar
  • 3 eggs
  • pinch of salt
  • Unbaked Pie shell

Instructions

Preheat oven to 425 degrees. Beat sugar, salt and eggs together. Add beans. Mix well. Let ingredients stand for 1/2 hour. Pour into pie shell. Bake at 425 until crust begins to brown, then reduce temp to 375 degrees and bake 30 additional minutes or until center of pie is set. Serve warm with ice cream or whipped cream.

I have never heard of this before. How do the pinto beans taste like pecan pie? Isn't two cups of sugar too much? I know pecan pie is pretty sweet, but this seems like too much sugar. I will try it. Has anyone else tried this pie before? Does it taste like pecan pie?
