Granny's Country Apple Fritters

Apple fritters are a fall time favorite. Fresh ginger and cinnamon give them a spiced flavor that complements the sweetness of the apples. Best when they are fresh out of the oven, Granny's Country Apple Fritters will have you anticipating Autumn every year. Add this to your collection of apple recipes and enjoy.

Ingredients
  • 1 pound apples, cored
  • 1/2 cup flour
  • 3 eggs
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon fresh grated ginger
  • 1 teaspoon lime zest
  • 1 teaspoon lime juice
  • 2 tablespoons sugar
  • 1/4 cup coconut oil
Instructions
  1. In food processor blitz apples with lime juice until finely chopped.
  2. Transfer to bowl and add all the rest of ingredients except coconut oil. Mix well.
  3. Preheat skillet with 1 tablespoon of coconut oil to medium high heat.
  4. Fry even sized fritters for 2 minutes per side or until golden brown. (When you fry in batches add oil in between the batches. )
  5. Serve piping hot with whipping cream, ice cream or natural maple syrup.
