Vegetable Manicotti

Ingredients
  • 1 cup Monterey jack cheese, divided, shredded
  • 1 large egg (or substitute)
  • 3/4 cup light ricotta cheese
  • 8 1/4 ounces can whole kernel corn, drained
  • 2 1/2 ounces jar sliced mushrooms, drained
  • 4 1/2 ounces can chopped green chiles, drained
  • 1 tablespoon fresh chives, chopped
  • 1/4 teaspoon salt
  • 6 manicotti shells, cooked
  • 16 ounces jar mild chunky salsa
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried Italian seasoning
Instructions

Combine 1/2 cup Monterey Jack cheese, egg, and next 6 ingredients. Stuff manicotti shells with mixture and arrange on a lightly greased 11x7" baking dish. Combine salsa, garlic powder, and dried Italian seasoning, spoon evenly over shells. Bake, covered, at 350 for 25 minutes. Uncover, sprinkle with remaining 1/2 cup of Monterey Jack cheese, and bake 5 more minutes.
