Cut the jack into 1-inch cubes and put it on the kitchen counter to warm up to room temperature. while the tortellini are boiling, throw the plum tomatoes into the water and stir. As soon as the water returns to a boil take the tomatoes out with a strainer and run them under cold running water. Peel them, chop them coarsely, and put them in a bowl with the butter and spices. When the tortellini are done, turn the heating element down to low/simmer, drain them, and then put the pot back on the element. Add the tomato mixture and stir thoroughly until the butter melts; add the cheese and the vinegar, toss thoroughly until the cheese is just beginning to melt, and serve.
