Spinach Stuffed Shells

Ingredients
  • 1 pkg. large macaroni shells
  • 1 small onion, chopped (1/4 cup)
  • 10 oz.s pkg frozen chopped spinach
  • 1 tablespoon instant chicken bouillon
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon dried thyme
  • 1 1/2 cups low-fat ricotta cheese
  • 1 cup low-fat cottage cheese
  • 2 eggs
  • 48 ounces jar spaghetti sauce
  • 8 to 12 oz shredded mozzarella cheese
Instructions

Preheat oven to 350 degrees. Cook spinach as directed on package, drain well. Cook shells as directed, drain, cool. In a large bowl, mix chopped onion, chicken bullion, garlic powder, thyme, ricotta cheese, cottage cheese, eggs, and cooked spinach. Using your hands and a large spoon, stuff shells with the mixture, and lay in rows in a 13" x 9" baking pan. Spread spaghetti sauce over the shells in the pan. Sprinkle shredded mozzarella on top. Bake at 350 degrees for 25 - 35 minutes, until warm in the center, and mozzarella cheese has melted.
