Pasta with Sun Dried Tomatoes

Ingredients
  • 4 cups cooked fusili or tortellini
  • 4 oil-packed sundried tomatoes, minced
  • Zest of 1 lemon, minced
  • 6 kalamata or nicoise olives, minced
  • 1/2 bunch italian parsley, washed and chopped
  • 1/2 cup grated parmesan cheese
  • very good quality extra virgin olive oil to taste
Instructions

Prepare and chop everything except pasta. Once the pasta is drained toss with some of the olive oil. Place pasta in a warm large bowl. Add sundried tomatoes,lemon zest, olives and parsley. Toss lightly. Sprinkle with Parmesan cheese and freshly ground pepper. Toss and serve. Variations Serve cold the next day. Add 1 tin of tuna if serving cold and drizzle a bit of Kraft golden caesar dressing over top.
