Pasta with Spicy Pea Sauce

Ingredients
  • 2 c. yellow split peas
  • 1 T olive oil
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 1/4 tsp chilli powder
  • 1/2 tsp turmeric
  • 1/2 tsp ground coriander
  • 1 tsp allspice
  • 1/4 c. lemon juice
  • 2 tsps grated lemon rind
  • Fettucine
Instructions

Cover peas with cold water in a large pan and boil, uncovered for 25 minutes. Drain. Heat the oil in a pan. Add onion, garlic, and cook for 2 minutes. Add spices, stir for 2 more minutes. Add the peas, lemon juice and rind. Cook over low heat for 8-10 minutes. Meanwhile, cook your pasta until just tender. Pour sauce over drained pasta and serve immediately.
