Hand-mixed method: mix the flour, salt and oil together. Make a well in the center and slowly pour in the water. Gradually bring in the flour from around the edges until everything is mixed well. Knead for 10 minutes. Food processor method: put the flour, salt and oil into the bowl and give it a couple of quick pulses to combine. While the machine is running, slowly pour the water in through the opening on top (slowly enough that the water doesn't splash on the sides). Let it run for about 1 minute to knead. For both methods, after kneading, wrap the dough in air-tight plastic and let it rest in the fridge for 1 hour before rolling and cutting. I find that it's easiest to work with while cold so I'll only take out a small bit at a time to roll and cut so the rest doesn't warm up waiting for me to get to it.
