Pumpkin Fettucini

Ingredients
  • 1 cup canned pumpkin
  • 1 cup cream
  • 1 cup grated parmesan cheese
  • 1/2 tsp grated nutmeg
  • 1/4 cup butter or margarine room temp
  • 12 ounces fettucuni freshly cooked and drained
  • salt and pepper
Instructions

Mix pumpkin, cream, 1/2 cup cheese and nutmeg in small saucepan. Simmer over low heat. Add butter to fettucuni in large bowl and toss to melt butter. Pour pumpkin mixture over pasta. Sprinkle with remaining cheese. Serves 4 to 6
