Penne Con Zuchinni (pasta with Courgette Sauce)

Ingredients
  • 1 pound (zucchini)
  • 4 tbsp. olive oil
  • salt
  • black pepper
  • 4 tbsp. light cream
  • 8 ounces penne pasta
  • 2 tbsp. chopped basil, or more
Instructions

Thinly slice the washed and trimmed zucchini. Saute in the olive oil for 15 minutes, but do not allow them to brown, adding the basil half way through cooking. Season twith salt and papper and combine with the cream. Blend in a food processor until smooth. Add the sauce to freshly cooked pasta, mix well and garnish with some chopped basil. Serves 3--4
