Orecchiette

Ingredients
  • 1 pound orecchiette
  • 1 pound broccoli rapa
  • 1/2 cup olive oil
  • 1 clove crushed garlic
  • 4 anchovies boned and cut into pieces
  • 1/2 cup dry white wine
  • grated Parmesan
  • salt & Pepper
Instructions

Cook the broccoli rapa in plenty of boiling water. When it is done, drain it, reserving the cooking water. Gently brown the garlic in a pan with the olive oil. Add the anchovies and mash them with a fork as they cook. Pour in the wine, let it absobr the flavors, and add the Rapa. Season with salt and pepper and cook for 15 minutes on a very low flame. Meanwhile, cook the Orechiette in the reserved cooking water. Drain them and toss them with the sauce and grated parmesan.
