Double Cheddar Macaroni and Cheese

Indulge yourself in this super cheesy macaroni. Double Cheddar Macaroni and Cheese is not only super cheesy but also super easy and delicious. Treat your family to a baked macaroni and cheese recipe masterpiece. It's double the delicious.

Cooking Time: 35 min

Ingredients
  • 1 tablespoon vegetable oil
  • 1 pound elbow macaroni
  • 9 tablespoons butter
  • 1/2 cup Muenster cheese, shredded
  • 1/2 cup mild Cheddar cheese, shredded
  • 1/2 cup sharp Cheddar cheese, shredded
  • 1/2 cup Monterey Jack cheese, shredded
  • 2 cups half and half
  • 1 cup Velveeta, cut into pieces
  • 2 large eggs, lightly beaten
  • 1/4 teaspoon seasoned salt
  • 1/8 teaspoon pepper to taste
Instructions
  1. Preheat oven to 350 degrees F.
     
  2. Lightly butter deep 2 1/2 quart casserole.
     
  3. Boil salted water and add oil, then macaroni and cook until tender, 7 minutes. Drain and return to pan.
     
  4. In small saucepan, melt one stick butter. Stir in macaroni.
     
  5. In large bowl, mix cheeses except Velveeta.
     
  6. To the macaroni, add half and half, 1 1/2 cups of cheese, Velveeta and eggs. Season with salt and pepper. Transfer to buttered casserole.
     
  7. Sprinkle with remaining 1/2 cup cheese and dot with remaining tablespoon butter. Bake about 35 minutes.
