Creamy Pasta with Leeks

This creamy pasta with leeks is brought to us by our good friends at Al Dente Pasta. If you love mellow, rich, and luscious leeks, then you'll absolutely adore this healthy pasta recipe. Try it today!

Ingredients
  • 3 tablespoons olive oil or butter
  • 4 medium leeks, cleaned and sliced into 1/2 inch strips
  • Salt and pepper
  • 6 ounces soft, mild goat's cheese
  • 12 ounces Al Dente Pasta
  • 1/2 cup chopped parsley
  • 3/4 cup reserved pasta water or chicken broth
  • Optional:
  • toasted peanuts, smoked salmon, bacon or pancetta, baby spinach, chopped tomato or red bell pepper
Instructions
  1. Put butter or olive oil in a frying pan.  Add the leeks and a teaspoon of salt, then cover with a lid. 
     
  2. Cook over a low heat, stirring occasionally, for about 10 minutes, until soft and sweet.
     
  3. Add black pepper.  Reove lid and continue cooking until leeks are tender.
     
  4. Stir in goat's cheese.  Meanwhile, cook the pasta in a large saucepan with plent of salted, boiling water.  Ladle out 3/4 cup of water and add to sauce to make a thick, but still runny sauce. 
     
  5. Drain pasta and toss with leeks and parsley.  Season to taste.
