Citrus Pasta

  • 2 T olive oil
  • 1 yellow onion, diced small
  • 1 red bell pepper, diced small
  • 2 bananas, sliced
  • 1/4 C pineapple juice
  • juice of 3 oranges
  • 1/4 C chopped cilantro
  • 4 T lime juice
  • 4 T finely chopped habaneros or 6 oz. inner beauty
  • 1/4 C grated Parmesan
  • 2 t unsalted butter
  • 1 pound fettuccine
  • salt and cracked pepper to taste

In a large saucepan, heat oil and saute onion and red pepper about 4 minutes over medium heat. Add bananas, pineapple and orange juices. Simmer 5 minutes over medium heat until bananas are soft. Remove from heat, add lime juice, cillantro, chile peppers and 3 T Parmesan. Mix well. Cook fettuccine until tender, put in a bowl. Add spice mixture and mix. Season with salt and pepper. Garnish with remaining Parmesan.
