Chopped Tomato & Garlic Egg Noodles

Ingredients
  • 8 oz.s wide egg noodles
  • 1 medium plum tomato chopped and seeded
  • 3 cloves garlic minced fine
  • olive oil
  • black pepper
  • Parmesan or Romano grated cheese
Instructions

Cook egg noodles so they're al dente; drain. While they're in the strainer, add olive oil, garlic and tomato to the pot and cook just until hot - about 1-2 minutes. Add noodles back to pot and toss. Serve with lots of black pepper and grated cheese.
