Chicken Mushroom Pasta

Ingredients
  • 4 boneless, skinless chicken thighs, cut into pieces
  • 8 ounces rotini
  • 1 tablespoon olive oil
  • 4 cloves garlic, chopped
  • 2 cups sliced fresh mushrooms
  • 1 jar red spaghetti sauce
  • 1 large tomato, chopped
  • shredded Parmesan cheese
Instructions

Cook pasta, drain, set aside. Heat olive oil in skillet over medium heat, add chicken. Cook 3 minutes. Add garlic and mushrooms, cook and stir 3 minutes. Add spaghetti sauce. Simmer 5 minutes or until chicken is no longer pink. Stir in tomatoes, simmer until heated through. Serve over pasta, top with Parmesan.
