Baked Ziti

Ingredients
  • 1 pound package ziti, cooked and drained
  • 1/4 cup olive oil
  • 1 cup onion finely chopped
  • 1 garlic clove crushed
  • 1 can Italian style tomatoes (2 lb.3 oz)
  • 1 can tomato paste (6 oz.)
  • 2 Tbsp. fresh chopped parsley
  • 1 Tbsp. sugar
  • 1 teaspoon oregano
  • 1/2 tsp basil
  • 1/4 tsp pepper
  • 2 cartons Ricotta cheese (15 to 16 oz each)
  • 1 package mozzarella cheese (8 oz)
  • 1/3 cup grated Parmesan cheese
  • 2 eggs
  • 1 Tbsp. fresh chopped parsley
  • 1 teaspoon salt
  • 1/4 tsp pepper
Instructions

Saute onion in the oil until tender, stir in garlic and cook a minute or two. Add remaining ingredients and cook and simmer to blend flavors. If you wish you can prepare sauce ahead of time. Bake in a 350F oven about 35 to 45 minutes uncovered until well heated. Yield: 8 to 10 servings.
