Amish Country Corncakes

From generation to generation my family has been making Amish Country Corncakes to serve with every dinner. Sweet and crumbly, these are heavenly with melted butter or maple syrup. Amish cooking has never been so sweet.

Ingredients
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup yellow cornmeal
  • 1 cup boiling water
  • 2 teaspoons honey
  • 1/4 teaspoon salt
  • 2 egg whites
  • Cooking spray
Instructions
  1. Cook corn, covered, in boiling water to cover until tender; drain and set aside to cool.
     
  2. Combine corn, cornmeal, boiling water, honey and salt in a medium bowl and stir well. Beat egg whites until stiff peaks form. Stir gently into corn mixture.
     
  3. Pour 1/4 cup batter onto hot griddle coated with cooking spray. Cook 3 minutes on each side. Makes 12 3 1/2" cakes.
