Double Chocolate Amaretto Cheesecake

As Oreo cookie cheesecake recipes go, this has to be one of the best. The Amaretto adds a wonderful flavor, as does the almond extract, that you just don't get in many other Oreo cookie recipes. Try it today - you won't be disappointed!

Serves: 8

Preparation Time: 20 min

Cooking Time: 40 min

Ingredients
  • 1 1/2 cups chocolate cookies, ground (like Oreos)
  • 2 tablespoons sugar
  • 1/4 cup butter
  • 1 pound cream cheese
  • 1/2 cup sugar
  • 2 large eggs
  • 6 ounces semi-sweet chocolate, melted and cooled
  • 1/2 teaspoon almond flavoring
  • 1 teaspoon vanilla
  • 1/3 cup Amaretto
  • 2/3 cup sour cream
Instructions
  1. Preheat the oven to 300F degrees.
     
  2. Blend together the Oreos, sugar, and butter and form a crust in an 8-inch pie dish.
     
  3. Beat the cream cheese until smooth.
     
  4. Beat in the sugar gradually.
     
  5. Beat in the eggs, one at a time, at low speed.
     
  6. Add the cooled melted chocolate, almond extract, vanilla, Amaretto, and sour cream; beat at low speed until blended well.
     
  7. Pour into the crust and bake at 300F degrees for one hour.
     
  8. Turn off the heat and let the cheesecake sit in the cooling oven for an additional hour.
     
  9. Remove from the oven and let cool to room temperature, then chill in the refrigerator for 24 hours.
