Almond Cheesecake with Oreo Crust

There are a lot of Oreo cookie recipes around, and this one is a favorite in my family. Even if you arent\' a cheesecake lover, you\'ll find that this is one of the best Oreo cookie cheesecake recipes there is!

Preparation Time: 15 min

Cooking Time: 18 min

Ingredients
  • 24 Oreo cookies, crushed
  • 1/3 cup granulated white sugar
  • 8 ounces cream cheese, at room temperature
  • 2 eggs
  • 1/4 teaspoon vanilla extract
  • 1/4 cup butter, melted
  • 1 cup sliced almonds
  • 1 whole peach or orange, sliced as garnish (optional) or
  • 1 cup berries or pineapple chunks, as garnish (optional)
Instructions
  1. Preheat oven to 350F degrees.
     
  2. In a blender or food processor, crush cookies and set aside 1/4 cup for topping.
     
  3. Add melted butter to processor and blend 1 to 2 seconds; press into a 9-inch pie plate and refrigerate until needed.
     
  4. Finely grind almonds with sugar in a food processor.
     
  5. Add cream cheese and blend until smooth.
     
  6. Add eggs and almond extract and blend using pulse switch.
     
  7. Spoon mixture onto the Oreo cookie crust.
     
  8. Bake until filling is set, about 18 minutes.
     
  9. Cool completely.
     
  10. Arrange fresh fruit decoratively on top of the cheesecake before serving.  Yields 1 9-inch pie.
